Why and how answered

While trying to find out how long to cook a acorn squash (a job formilly filled by my Joy of Cooking book, now filled by the www) I tripped over Whole Foods Market : Health Info. Don't be fooled by the title-- as well as nutrition info, you can prepartion techniqes, when and how to buy and more. This is a handy little reference tool

Acorn Squash is one of my absolute favorite vegetables. A couple weeks ago I was sooo excited to find them in plenty at the store. I prpare then the same way as suggested in the link above. I do not use the foil however, I just fill the pan with water so that it comes about 1/8 of an icnh up on the squash. Using a smaller pan helps also, that way the water steams them and cuts the cooking time to about 30 minutes in a good hot oven. We serve them with just salt and pepper, although my brother preferes using some butter and brown sugar.
