fluffy food

Everybody likes fluffy light food-- but most of it is horribly difficult to make: souffles, puff pastery, profiterole....

But this recipe could not be simpler, and it's lovely and fluffy. When I first made them, i though-- these are just like gougere.. or maybe yorkshire puddings.. or yum!

mile-high popovers!

1 cup milk, room temperature
1 cup flour
2 eggs
1 tablespoon melted butter
pinch salt

preheat overn to 400f

put all ingediants in a blender. at this point you may wish to add a half cup finely grated cheese, or a dash of herbs, such as chive or thyme, or what have you. or leave the recipe as is.

blend for 8 seconds, stopping a couple of times to scrape down the side of the blender to assure everything is mixed.

pour mixture into generously butter-greased muffin pan, filling about halfway. bake for 35-40 minutes. Do not open over door until done, or they will fall.
